Roasted Cauliflower
Roasting some vegetables is perhaps the simplest and healthiest way to create a side for dinner. The right vegetable can go along with anything from lobster to scrambled eggs! Cauliflower is one of our favorites to roast because, flavor-wise, it is very much a blank canvas. You can keep it simple with just salt and pepper or go nuts with a custom spice blend.
Our recipe adds just a touch of color and zesty flavor with Old Bay seasoning. It's kinda like putting Old Bay on popcorn—only healthier and way more delicious. A 425ºF oven is the ideal roasting temperature for most veg (see our Brussels sprouts and green beans recipes) to give them that high-heat caramelization (aka flavor).

Kosher salt
Freshly ground black pepper
- Preheat oven to 425ºF. In a large bowl, combine cauliflower, olive oil, Old Bay, salt and black pepper.
- Add cauliflower to a sheet tray and distribute into a single layer. Roast the cauliflower for 25 to 30 minutes, tossing halfway through, until the florets have browned on the edges. Transfer to a plate or bowl and serve.
